“ Best ramen I've had in Italy surprisingly, (I live here and trust me, I've had my fair share) each ramen (except special edition ones) have a vegetarian option which is just as delicious. It's so good and the workers are really kind. The owner and his japanese wife have lived in Japan for 5 years so they know what they're doing. They have good desserts too. Good price you won't be disappointed. It's small so you'll need a reservation. Very authentic. The location is kinda bad but everything else absolutely makes up for it. - for now they don't accept credit cards outside of EU (fortunately wasn't a problem for us) ”

My only nitpick is that the benches along the wall are a few centimetre (like 5/10cm) higher than a regular chair, meaning are seated higher and need to lower yourself a bit more when eating. ”
“ So I have been thinking a lot how to write this without offending other ramen places… but I have to say it bluntly as it is. No other ramen place in Pisa comes even CLOSE to Kabuto ramen. I have tried every ramen in Pisa and none of them had this authentic, one of a kind original flavor. From starter to dessert it’s all home made and with love. A great atmosphere, very lovely and supportive staff. Two great chefs. I really don’t know how to say it but it was just perfect. The broth, the noodles, the taste overall. It was all perfect. I was very happy about it. I will not visit any other ramen place but this one. Also make sure to find this super delicious gem by looking out for the banner which is written in Japanese (see picture) it’s the best you can do for your taste buds and stomach. The whole experience was mind blowing. Try the beef starter for sure. Never had such tender beef before. Also have the miso ramen. It’s just AMAZING. I really cannot find the words to describe it but it’s a whole experience. As if in the middle of Pisa you are in Japan with all its authentic taste and atmosphere. 1000/10 ”
